Jowar Upma

Millets we all know are very healthy and much in news these days. Even doctors are recommending to replace wheat with millets as they are more beneficial and help maintain our health. This upma is made with sorghum also known as jowar. It does take some time cook but the end result is well worth it.

Ingredients

 

·         1 cup sorghum (jowar)

·         Salt to taste

·         2 tbsps ghee

·         1 tsp cumin seeds

·         A pinch of asafoetida (hing)

·         1 sprig of curry leaves

·         2-3 green chillies, slit

·         ½ tsp sugar

·         2 tbsps roasted, peeled and crushed peanuts

·         2 tbsps chopped fresh coriander leaves

·         Lemon wedges for serving

·         Fresh coriander sprig for garnish

 

Method

 

1.      Wash jowar well and soak in sufficient water for 8-10 hours.

2.      Drain the water, transfer into a pressure cooker. Add 2½ cups water, salt and close the lid. Cook on medium heat till the pressure is released 4-5 times.

3.      Heat ghee in a non-stick pan, add cumin seeds and once they start to change colour, add asafoetida, curry leaves and green chillies, mix and sauté for 30-40 seconds.

4.      Open the pressure cooker once the pressure settles completely.

5.      Add cooked jowar to the pan and mix well. Adjust salt, add sugar, peanuts and coriander leaves and mix well.

6.      Transfer into a serving bowl, garnish with lemon wedges and coriander sprig and serve hot.
