Olan Olan is a dish brought to you from the state of Kerala in South India. It is a light and subtle-flavored dish prepared from white gourd or ash-gourd, black-eyed peas and coconut milk and seasoned with coconut oil. It is a dish which is a must during festivals and served as part of a Sadhya. By Sanjeev Kapoor 22 Aug 2024 in Recipes Main Course Vegetarian New Update Main ingredients Red chawli, Ash gourd, Green chillies, Curry leaves, Thin coconut milk, Thick coconut milk, Coconut oil Cuisine Kerala Course Main course vegetarian Prep time 3-4 hours Cook time 10-15 minutes Serve 4 Taste Mild Level of cooking Easy Others Vegetarian Ingredients 1½ cups boiled red chawli 200 grams ash gourd (peta), peeled and cut into 1 inch cubes 2-3 green chillies, slit 10-12 curry leaves 1 cup thin coconut milk Salt to taste ½ cup thick coconut milk 1 tablespoon coconut oil Method Heat an earthen vessel, add red chawli, ash gourd, green chillies, curry leaves, thin coconut milk and salt and mix well. Bring the mixture to a boil. Reduce heat to medium, cover and cook till the ash gourd is cooked completely. Switch the heat off and add thick coconut milk and mix well. Add coconut oil, mix and transfer into a serving bowl.
