Olan

Olan is a dish brought to you from the state of Kerala in South India. It is a light and subtle-flavored dish prepared from white gourd or ash-gourd, black-eyed peas and coconut milk and seasoned with coconut oil. It is a dish which is a must during festivals and served as part of a Sadhya.

Ingredients

  • 1½ cups boiled red chawli
  • 200 grams ash gourd (peta), peeled and cut into 1 inch cubes 
  • 2-3 green chillies, slit
  • 10-12 curry leaves
  • 1 cup thin coconut milk
  • Salt to taste
  • ½ cup thick coconut milk
  • 1 tablespoon coconut oil

Method

  1. Heat an earthen vessel, add red chawli, ash gourd, green chillies, curry leaves, thin coconut milk and salt and mix well. Bring the mixture to a boil. Reduce heat to medium, cover and cook till the ash gourd is cooked completely. 
  2. Switch the heat off and add thick coconut milk and mix well. Add coconut oil, mix and transfer into a serving bowl. Serve hot.
