Ingredients

  • 6-8 medium potatoes, boiled and halved
  • 1-2 tablespoons refined flour
  • Oil for deep frying 
  • 1 cup boiled brown Bengal grams (kala chana)
  • 1 small onion, finely chopped
  • 1 small cucumber, finely chopped
  • 2 tablespoons finely chopped raw mango
  • 1 small tomato, finely chopped
  • ½ lemon 
  • 1 teaspoon red chilli powder
  • ½ teaspoon roasted cumin powder
  • Black salt to taste
  • ½ teaspoon chaat masala 
  • Green chutney as required
  • Sweetened yogurt as required
  • Date and tamarind chutney as required
  • Masala dal for sprinkling
  • Chana jor garam for sprinkling
  • Masala peanuts for sprinkling
  • Sev for garnish
  • Chopped fresh coriander leaves for garnish

Method

  1. Peel potatoes and scoop out the centre to make a bowl. Reserve the scooped boiled potato mixture.
  2. Arrange the potato bowls on the worktop, sprinkle refined flour to lightly coat them.
  3. Heat sufficient oil in a kadai. Gently slide in the potato bowls and deep-fry till golden brown and crisp. Drain on absorbent paper.
  4. Take brown Bengal grams in a large bowl, add the reserved scooped potions of the potatoes. Add onion, cucumber, raw mango, tomato, squeeze the juice of lemon, red chilli powder, roasted cumin powder, black salt and mix well. Add chaat masala and mix.
  5. Arrange the potato bowls on a serving plate, drizzle a little green chutney into each potato bowl. Similarly, drizzle some sweetened yogurt, date and tamarind chutney and put some Bengal gram mixture. Drizzle some sweetened yogurt, date and tamarind chutney again and green chutney again. Sprinkle masala dal, chana jor garam, masala peanuts, garnish with sev and coriander leaves. Serve immediately.
