Spicy Jackfruit Sliders

Ingredients

  • 300 grams raw jackfruit, peeled, cut into small cubes, boiled and drained
  • 3 toasted slider buns
  • 1 tablespoon oil
  • 1 teaspoon chopped ginger
  • 1½ teaspoons chopped garlic
  • 2 green chillies, chopped 
  • 1 medium onion, chopped
  • ¾ cup tomato puree
  • Salt to taste
  • ¼ teaspoon dried mixed herbs
  • Black pepper powder to taste
  • ¼ teaspoon red chilli powder
  • ¼ teaspoon smoked paprika powder
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons brown sugar
  • 1 small carrot, peeled and thinly sliced
  • 1 onion, thinly sliced
  • ½ cup shredded purple cabbage
  • 2 tablespoons mayonnaise + to drizzle
  • Assorted lettuce leaves as required

Method

  1. Heat oil in a non-stick pan, add ginger, garlic and green chillies, mix and sauté for a few seconds.
  2. Add onion, mix and sauté till translucent.
  3. Add tomato puree, salt, dried mixed herbs, black pepper powder, red chilli powder and smoked paprika powder and mix well. Saute on medium heat for 4-5 minutes or till oil separates.
  4. Add Worcestershire sauce and brown sugar and mix well. Add jackfruit pieces and mix well. Cook on medium heat for 2-3 minutes.
  5. Add parsley and mix well.
  6. To make salad, take carrot in a bowl, add onion, purple cabbage, salt, black pepper powder and mayonnaise and mix well.
  7. Place the lower halves of the slider buns on the worktop and spread some mayonnaise on them.
  8. Arrange some lettuce leaves on top. Place a spoonful of jackfruit mixture on each half.
  9. Top up with salad and cover with the remaining halves.
  10. Arrange the sliders on a serving platter and serve with potato chips.
