Stir Fried Peri Peri Sweet Potatoes

Ingredients
- 400 grams sweet potatoes, scraped, boiled and cut into wedges
- 2 teaspoons peri peri spice mix
- 2 tablespoons corn flour
- 1 tablespoon oil + for deep-frying
- 1 inch ginger, chopped
- 1 tablespoon chopped garlic
- 2 green chillies, chopped
- Crushed black peppercorns to taste
- 1 tablespoon red chilli sauce
- 2-3 tablespoons sweet chilli sauce
- Salt to taste
- 2 teaspoons toasted white sesame seeds
- 2-3 tablespoons chopped spring onion greens + for garnish
Method
- Take sweet potatoes in a bowl, add corn flour and mix well.
- Heat sufficient oil in a kadai. Slide the sweet potato pieces and deep-fry till golden brown and crisp. Drain on absorbent paper.
- Heat 1 tablespoon oil in a non-stick wok, add ginger and garlic, mix and sauté for 30 seconds.
- Add green chillies, crushed peppercorns, red chilli sauce, sweet chilli sauce, peri peri spice mix and salt and mix well.
- Add 2-3 tablespoons water and mix well. Add fried sweet potatoes and toss.
- Add white sesame seeds and spring onion greens and toss well.
- Transfer into a serving plate, sprinkle spring onion greens and serve hot.
