Tomato Cheese Toast

Lightly marinated mozzarella and tomato slices between bread slices slathered with butter and garlic mayo and then grilled, sure is a fancy snack.

Ingredients

  • 2 large tomatoes
  • 100 grams mozzarella cheese
  • 8 multigrain bread slices
  • Extra virgin olive oil to drizzle
  • Salt to taste
  • Red chilli flakes to sprinkle
  • 2 teaspoons chopped fresh parsley
  • 2 tablespoons chopped black olives
  • ½ teaspoon dried mixed herbs
  • Crushed black peppercorns to taste
  • Butter as required
  • 4 teaspoons garlic mayo
  • Shredded fresh basil leaves as required

Method

  1. Thinly slices mozzarella cheese and tomatoes and place them on a plate. Drizzle olive oil, sprinkle salt, red chilli flakes, parsley, olives, dried herbs and crushed peppercorns and rub them all over the slices.
  2. Apply butter and garlic mayo on all bread slices. Arrange the tomato slices on 4 bread slices.
  3. Arrange mozzarella slices over the tomato slices and sprinkle some basil on top. Cover with remaining 4 slices.
  4. Preheat a sandwich griller and place the prepared sandwiches. Grill for 5-6 minutes or till crisp.
  5. Cut each sandwich into half, arrange them on serving plates and serve immediately.
