Varicha Dosa

Vari or samo is an obvious substitute for rice during the days when people observe religious fast or vrat. So it can be used to make dosas which is a popular breakfast snack. In this dosa we have used vari and sabudana with yogurt to make delicious dosas which once you taste them you will want to make often.

Ingredients

  • 1 cup barnyard millet (vari / samo), soaked for 4-5 hours and drained
  • 1 cup yogurt
  • 2 tablespoons sago (sabudana), soaked for 4-5 hours and drained
  • Rock salt (sendha namak) to taste
  • Ghee for drizzling
  • Coconut chutney to serve

Method

  1. Put vari in a mixer jar, add yogurt, sabudana and rock salt and grind to a smooth mixture. Transfer into a large bowl and whisk well.
  2. Heat a non-stick tawa.
  3. Pour a ladleful of the batter and spread it in a circular motion to make a thin disc. Drizzle ghee all around and cook for 1-2 minutes. Fold in half and serve hot with coconut chutney.
  4. Make more dosas similarly.
