The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.
Maharashtrian cuisine covers a wide range from being extremely mild to very spicy dishes. Wheat, rice, jowar, vegetables, lentils and fruit form important components of Maharashtrian diet. 
Everybody knows about the unbeatable taste of the Mumbai’s chaats! But there is so much more to explore and savour in the other regions of Maharashtra.

Ingredients for Aaley Pak Recipe

  • Ginger 100 grams

  • Almonds 25 grams

  • Sugar 250 grams

  • Mawa (khoya) 500 grams

  • Ghee as required


Step 1

Peel ginger, wash well and chop roughly. Soak almonds in hot water for five minutes. Drain, peel off skin and chop roughly. Combine ginger and almonds and add a little water. Make a fine paste of it. Mix seventy five mililitres of water and sugar.

Step 2

Put on heat and cook until a three-string consistency sugar syrup is prepared. Add mawa, ginger and almond paste to the sugar syrup and continue cooking until the mixture thickens.

Step 3

Remove from heat, beat well for ten to fifteen minutes. When mixture begins to set, pour out into a greased thali. Smoothen the surface and keep aside to cool. It might take an hour or so. When the pak is set, cut into desired size/shape.
