Ingredients list for Achari Pulao

  • 3 cups Basmati rice , cooked
  • 3 tablespoons Green chilli pickle (mirchi ka achar)
  • 1 tablespoon Oil
  • 1 teaspoon Mustard seeds
  • 1 Dried red chilli
  • 1 medium Onion , finely chopped
  • 1/2 cup Mixed capsicums (red, yellow & green) triangles
  • 1/2 cup Corn kernels , boiled
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 1/2 tablespoon Lemon juice
  • 2 teaspoons Fresh coriander leaves , chopped
  • for garnishing Fresh coriander sprigs

Method

  1. Put green chilli pickle into a mixer jar and grind to a smooth paste.
  2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Break red chilli and onion, mix and sauté till onion turns translucent.
  3. Add mixed capsicums and corn kernels, mix and saute for 1 minute. Add green chilli pickle paste and turmeric powder, mix and saute for 1 minute.
  4. Add rice, toss well and cook for 1-2 minutes. Add salt, toss and cook for 1 minute. Add lemon juice and mix. Add coriander leaves and mix well.
  5. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
