How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Akki Roti Recipe

  • Rice flour 2 cups

  • Medium onion finely chopped 1

  • Fresh coconut scraped 4 tablespoons

  • Green chillies finely chopped 2-3

  • Carrot grated 1/2 cup

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Salt to taste

  • Ghee 2 tablespo to shallow fry

  • Cumin seeds 1 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Boil 2 cups water in a non-stick pan. Meanwhile, take rice flour in a bowl, add onion, coconut, green chillies, carrot, red chilli powder, turmeric powder, salt, 1 tbsp ghee and cumin seeds.

Step 2

Add salt and remaining ghee to the boiling water and mix well. Add required amount of boiling water to the rice flour mixture and mix well. Knead into soft dough, add coriander and mix well.

Step 3

Heat a non-stick tawa. Keep a plastic sheet on the worktop and grease it with a little ghee, place a portion of the dough over it, place another plastic sheet over it and tap lightly with finger tips to make a roti.

Step 4

Place the roti on hot tawa and cook, turning sides and applying a little ghee, till golden brown on both sides. Make more rotis with the remaining dough.

Step 5

Place them on a serving platter and serve hot.
