Ingredients list for Aloo Gobhi - SK Khazana

  • 3 medium Potatoes peeled and cut into medium cubes
  • 200 grams Cauliflower florets
  • 1 1/2 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 3-4 Green chillies slit
  • 3 tablespoons Onion chopped
  • 3 tablespoons Tomato chopped
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Garam masala powder
  • 1 1/2 teaspoons Coriander powder
  • 1 inch Ginger cut into thin strips
  • 1 tablespoon coriander leaves chopped
  • for garnish coriander leaves

Method

  1. Heat oil in a non-stick pan, add cumin seeds and when their colour changes, add green chillies, mix and saute for 1 minute. Add onion, mix and saute for 2-3 minutes.
  2. Add tomatoes, mix and saute for 1 minute. Add salt, mix well, cover and cook till tomatoes soften.
  3. Add turmeric powder, red chilli powder, garam masala powder and coriander powder and mix well. Cover and cook for 2-3 minutes.
  4. Add potatoes, cauliflower florets, salt and ½ cup water and mix well. Cover and cook for 8-10 minutes or till the vegetables are done.
  5. Remove the lid, sprinkle ginger strips and coriander leaves and mix well.
  6. Transfer into a serving bowl, garnish with coriander leaves and serve hot with phulkas.
