Ingredients list for Apricot Chicken on Skewers
- 1 Boneless chicken leg, cut into 1 inch pieces
- 4 tablespoons Apricot jam
- 18-20 Golden apricots dried
- to taste Salt
- 1 teaspoon Crushed black peppercorns
- 2 tablespoons Oil
- 2 medium Onions chopped
- 1/2 teaspoon Coriander powder
- 1/2 teaspoon Cumin powder
- 1 1/2 teaspoons Curry powder
- 1 tablespoon brown sugar/jaggery
- 2 teaspoons Lemon juice
- 1 Bay leaf
- 1 medium Onion cut into cubes and layers separated
- 1 medium Green capsicum diced
Method
- Place chicken pieces in a bowl. Add salt and crushed peppercorns, mix and set aside.
- Heat one tablespoon oil in a non-stickpan,add onions and sauté till golden.
- Add coriander powder, cumin powder and curry powder, mix well and sauté for a minute.
- Add brown sugar, lemon juice, apricot jam, one-fourth cup of water and bay leaf, mix well and cook on high heat till it reaches a sauce consistency. Discard the bay leaf and set aside to cool.
- Pour the sauce over the marinated chicken and mix well. Marinate for four to five hours.
- Insert onto the skewers an onion layer, capsicum cube, dried apricot and marinated chicken piece. Repeat the process with the remaining chicken pieces.
- Heat remaining oil in a non-stick grill pan. Place the skewers on it, grill rotating since they are well cooked from all the sides and cook till the chicken is fully done.
- Serve hot.
