Cut brinjals into long thin slices with a sharp knife. Sprinkle salt on them, place them in the pan in single layer and cook turning sides. Put onion, garlic, walnuts, red capsicum in a chopper and chop. Transfer this into a bowl. Cook brinjal slices till lightly browned on both sides. Put pomegranate pearls, basil leaves, celery, coriander powder, saffron in the chopper, chop and add to the bowl. Add vinegar and mix everything well. Keep some of this mixture on one side of each brinjal slice and roll. Arrange these rolls on a serving plate, put some pomegranate pearls on one side and serve.
