Ingredients list for Baingan Canapes
- 1 medium Eggplant cut into small cubes
- 16 small Biscuits
- 2 tablespoons Oil
- 1 medium Onion finely chopped
- 1 Green chilli finely chopped
- 1/2 teaspoon Red chilli powder
- 1/2 teaspoon Garam masala powder
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 1 medium Tomato finely chopped
- 1 tablespoon Fresh coriander leaves chopped
- for garnish Fresh coriander
Method
- Heat oil in a non-stick pan, add onion and green chilli and sauté on medium heat till the onion turns a light golden.
- Add red chilli powder, garam masala powder, turmeric powder and salt. Mix well and add tomatoes. Mix well and cook till soft.
- Add eggplant and mix well. Cook for five minutes on medium heat, stirring occasionally. Add coriander leaves and mix. Remove from heat.
- Arrange the biscuits on a serving platter, put a little eggplant mixture on each of them. Garnish with coriander sprigs and serve.
