Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Baingan Saaswe Recipe

  • Brinjals roasted 1 large

  • Thick buttermilk 1 cup

  • Mustard seeds 1 teaspoon

  • Coconut scraped 1/2 cup

  • Garlic 3-4 cloves

  • Salt to taste

  • Green chillies 5

  • Oil 2 teaspoon


Step 1

Roast the brinjal, peel and mash. Grind three red chillies, half the mustard seeds, coconut, garlic and salt with a little water to a fine paste. Add the buttermilk and a little salt to the brinjal and mix. Add the ground masala and mix.

Step 2

Heat oil in a small pan. Add the remaining mustard seeds. When they splutter add the remaining red chillies, broken into smaller pieces. Add to the brinjal mixture and cover immediately to trap the flavours.

Step 3

Mix well and serve.
