Ingredients
- 1 large brinjal, chopped
- 2 medium onions, chopped
- 2 medium potatoes, peeled and diced
- ½ cup green peas
- 2 tablespoons oil
- 2-3 green chillies, chopped
- 1 inch ginger, chopped
- ¼ teaspoon asafoetida
- ½ teaspoon garam masala powder
- ½ teaspoon red chilli powder
- 1 teaspoon coriander powder
- Salt to taste
Method
- Heat oil in a non-stick pan. Add onions and sauté till golden.
- Add green chillies, ginger and asafoetida and mix well. Add little water and mix well.
- Add garam masala powder, chilli powder and coriander powder and mix well. Add little water, mix and cook till the oil separates.
- Add brinjal, potatoes and green peas and mix well. Add little water, mix, cover and cook till the vegetables are fully done.
- Add salt, mix well and let it get heated through.
- Serve hot garnished with a coriander sprig.
