Bourbon Chicken A really heady recipe all the way from America – chicken cooked with bourbon whiskey and some spices. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 10 Jun 2016 in Recipes Course New Update Main Ingredients Boneless chicken, Soy sauce Cuisine American Course Main Course Chicken Prep Time 7-8 hour Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Bourbon Chicken 200 grams Boneless chicken thigh 3 teaspoons Soy sauce 2 teaspoons brown sugar/jaggery 1½ teaspoons Garlic chopped 1 teaspoon Ginger chopped to taste Crushed black peppercorns to taste Salt 1½ Red bird?s-eye chillies 1 Onion 1½ teaspoons Vinegar 2 cups Chicken stock 1 cup Rice soaked and drained 3 tablespoons bourbon whiskey Method Take chicken thigh on a plate. Add soy sauce, brown sugar, 1 teaspoon chopped garlic, ginger, crushed peppercorns and salt. Finely chop 1 chilli and add alongwith oil, finely chopped spring onion bulb, bourbon and vinegar. Rub well all over and marinate for overnight. Heat stock with little salt in a deep non-stick pan and bring to a boil. Heat some oil in a non-stick grill pan. Place chicken alongwith the marinade and grill on medium heat till evenly done from both sides. Add rice to the stock alongwith salt and remaining garlic and cook till the rice is fully done. Drain the rice in a colander. Transfer the rice onto a serving plate. Place grilled chicken along, garnish with chopped spring onion greens and remaining chopped chilli.
