History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Bread Pakoda - SK Khazana Recipe

  • Bread slices 4

  • Potatoes boiled, peeled and mashed 2 medium

  • Oil 2 teaspoons

  • Oil for deep-frying

  • Mustard seeds 1 teaspoon

  • Curry leaves 7-8

  • Green chilli paste 1 teaspoon

  • Turmeric powder 1 1/4 teaspoon

  • coriander leaves chopped 1 tablespoon

  • Salt to taste

  • Gram flour (besan) 1 1/2 cups

  • Red chilli powder 1 teaspoon

  • Date and tamarind chutney to serve

  • Green chutney to serve


Step 1

Heat 2 tsps oil in a pan, add mustard seeds and let them splutter. Add curry leaves, green chilli paste and sauté for 1 minute.

Step 2

Add potatoes and ¼ tsp turmeric powder and mix till well combined. Add coriander leaves and mix well. Add salt, mix and take the pan off the heat. Transfer into a bowl and let the mixture cool down to room temperature.

Step 3

For the batter, take gram flour in a large bowl. Add remaining turmeric powder, red chilli powder, salt and sufficient water and whisk till you get a smooth and thick batter.

Step 4

Evenly spread a portion of the potato mixture on top of a bread slice, cover with another bread slice and cut into half diagonally.

Step 5

Heat sufficient oil in a kadai, coat each diagonal bread piece with the batter and slide it into the hot oil. Deep fry till golden and crisp. Drain on absorbent paper.

Step 6

Cut each bread in half and arrange them on a serving plate. Serve hot with date and tamarind chutney, green chutney and tomato ketchup.
