Ingredients list for Burghul Salad with Tomato Dressing

  • 1/2 cup Broken wheat (dalia/lapsi)
  • 4 medium Tomatoes
  • 4 medium Onions
  • to taste Salt
  • 1 teaspoon Red chillies crushed
  • 1/4 cup Walnuts chopped
  • 1/4 cup Pistachios chopped
  • 1 1/2 tablespoons Extra virgin olive oil
  • Juice of 1 lemon
  • for garnishing Fresh mint sprigs

Method

  1. Cut tomatoes roughly and put into a blender jar and puree. Transfer into a bowl.
  2. Add dalia and mix well. Place in refrigerator for 10-15 minutes.
  3. Chop onions and add to tomato-dalia mixture along with salt, crushed red chillies, walnuts, pistachios, 1½ tbsps extra virgin olive oil and lemon juice and mix well.
  4. Transfer the salad onto a serving dish and drizzle little extra virgin olive oil on top. Garnish with mint sprig and serve immediately.
