Ingredients for Char Grilled Salmon With Spicy Roast Tomato Dip Recipe

  • Salmon 600 grams

  • Tomatoes halved 6

  • Fresh parsley 1 tablespoon

  • Garlic chopped 2 cloves

  • Lemon zest 1/2 teaspoon

  • Lemon juice 1 teaspoon

  • Olive oil 2 tablespoons

  • Black pepper powder 1/2 teaspoon

  • Salt to taste

  • Fresh basil leaves chopped 1 tablespoon

  • Dried red chillies seeded and chopped 1

  • Garlic chopped 2 cloves

  • Olive oil 1 tablespoon

  • Balsamic vinegar 1 tablespoon

  • Salt to taste

  • Black pepper powder to taste


Step 1

Cut the salmon into four equal darnes and cut each darne into two pieces.

Step 2

For the marinade blend together basil leaves, parsley, garlic, lemon zest, lemon juice, olive oil, black pepper powder and salt to a thick paste.

Step 3

Marinade the salmon in this paste and refrigerate for an hour. To prepare the dip preheat the oven at 200°C.

Step 4

Place tomatoes in a tray. Sprinkle red chilli, garlic, olive oil, vinegar, salt and black pepper powder and roast for thirty minutes. Cool.

Step 5

Blend it in a blender until smooth. Pass it through a sieve. Add salt and pepper powder to adjust the seasoning.

Step 6

Thread the salmon darnes onto skewers. Heat the grill and grill the salmon for two to three minutes on each side till both sides are equally cooked. Serve hot with spicy roast tomato dip.
