Ingredients list for Chettinad Fish Fry

  • 400 grams Surmai darnes
  • to taste Salt
  • 1/4 teaspoon Turmeric powder
  • 1/2 teaspoon Lemon juice
  • 7-8 Garlic cloves roughly chopped
  • 1 inch Ginger roughly chopped
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds (saunf)
  • 2 teaspoons Coriander seeds
  • 2 teaspoons Black peppercorns
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Tamarind paste
  • for shallow frying Oil 1 teaspoon + 2 tablespoons

Method

  1. Marinate fish pieces with salt, turmeric powder and lemon juice and set aside for fifteen minutes.
  2. Put garlic, ginger, cumin seeds, fennel seeds, coriander seeds, black peppercorns, salt, red chilli powder and tamarind paste in a mixer jar and blend to a smooth paste.
  3. Apply this paste to the fish pieces and set aside for an hour.
  4. Heat two tablespoons oil in a non-stick pan and shallow fry the fish from both sides till properly cooked.
  5. Drain on absorbent paper. Serve hot.
