Ingredients
- 2 boneless chicken breasts
- 1 teaspoon paprika powder
- Salt to taste
- 1 teaspoon lemon juice
- 1 tablespoon oil
- 1 cup cooked rice
- 1 medium tomato, finely chopped
- 1 celery stalk, finely chopped
- 1 green chilli, finely chopped
- 1 teaspoon chopped fresh mint leaves
- 1 teaspoon sugar
- ¼ cup roasted peanuts, crushed
Method
- Sprinkle salt, paprika powder and drizzle lemon juice over the chicken.
- Heat oil in a non-stick frill pan, place chicken and cook till the grill marks appear on both the sides. Cool.
- Roughly chop chicken. Transfer into a bowl.
- Add rice, tomatoes and mix well.
- Add celery, chillies, mint leaves and mix well.
- Add sugar, salt and pepper powder and mix well.
- Serve immediately garnished with peanuts
