Chicken Mince Salad

A meal by itself chopped - grilled chicken mixed with rice, salad ingredients and crushed peanuts. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 boneless chicken breasts
  • 1 teaspoon paprika powder
  • Salt to taste
  • 1 teaspoon lemon juice
  • 1 tablespoon oil
  • 1 cup cooked rice
  • 1 medium tomato, finely chopped
  • 1 celery stalk, finely chopped
  • 1 green chilli, finely chopped
  • 1 teaspoon chopped fresh mint leaves 
  • 1 teaspoon sugar
  • ¼ cup roasted peanuts, crushed

Method

  1. Sprinkle salt, paprika powder and drizzle lemon juice over the chicken.
  2. Heat oil in a non-stick frill pan, place chicken and cook till the grill marks appear on both the sides. Cool.
  3. Roughly chop chicken. Transfer into a bowl.
  4. Add rice, tomatoes and mix well.
  5. Add celery, chillies, mint leaves and mix well.
  6. Add sugar, salt and pepper powder and mix well.
  7. Serve immediately garnished with peanuts
