When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Triple Fried Rice-SK Khazana Recipe

  • Boneless chicken cut into cubes 1001 grams

  • Rice cooked 1 1/2 cups

  • Oil 2 tablespo teaspoon

  • Eggs 2

  • Salt to taste

  • Black peppercorns crushed to taste

  • Garlic finely chopped 1/2 tablespoon

  • Ginger finely chopped 1/2 tablespoon

  • Dried red chillies broken 2

  • Schezwan sauce 2 tablespo cup

  • Noodles boiled 1 cup

  • Spring onion greens chopped 1 tablespo for garnish

  • Fried noodles to serve

  • Gravy

  • Boneless chicken cut into small pieces 100 grams

  • Oil 1 tablespo to deep fry

  • Salt to taste

  • Black peppercorns to taste

  • Cornflour 2 tablespoons

  • Garlic finely chopped 1/2 tablespoon

  • Ginger finely chopped 1/2 tablespoon

  • Small onion cut into cubes and layers separated 1

  • Dried red chilli broken 1

  • Schezwan sauce 1/2 cup

  • Soy sauce 1 teaspoon

  • Cornflour slurry 1 tablespoon

  • Salt to taste

  • Black peppercorns to taste

  • Spring onion greens chopped 1 tablespoon

Method

Step 1

For the gravy heat sufficient oil in a kadai.

Step 2

Mix together chicken, salt, crushed peppercorns and cornflour in a bowl. Deep-fry chicken pieces in hot oil for 2-3 minutes or till golden brown. Drain on absorbent paper and set aside.

Step 3

For the fried rice, heat 1 tablespoon oil in a non-stick pan. Break an egg and put in a bowl, add salt and crushed peppercorns and beat lightly. Add to the pan and cook stirring to make scrambled egg. Transfer into a plate and set aside.

Step 4

Heat 1 tablespoon oil in another non-stick pan, add garlic, ginger, broken red chillies and 2 tablespoons schezwan sauce and mix well.

Step 5

Add chicken cubes and mix. Add a little water and mix and cook till the chicken is done.

Step 6

Add noodles and cooked rice and toss well.

Step 7

Add ½ cup schezwan sauce and mix. Add scrambled egg and mix. Add some chopped spring onion greens and mix well. Keep it aside.

Step 8

To make the gravy, heat 1 tablespoon oil in yet another non-stick pan, add garlic, ginger, onion, broken red chilli and mix well. Add schezwan sauce and some water and mix well.

Step 9

Add soy sauce, cornflour slurry, mix and cook till the mixture thickens.

Step 10

Add fried chicken cubes and mix well. Add salt, crushed black peppercorns, spring onion greens and mix. Set aside.

Step 11

Heat 1 teaspoon oil in a clean non-stick pan, break the remaining egg into it and fry the egg on both sides.

Step 12

Put some fried rice on one side of a serving plate and keep the fried egg over it. Put some gravy in a bowl and keep it beside the rice. Keep the fried noodles in another bowl and serve immediately.
