Ingredients 

  • ½ cup boiled and shredded chicken
  • 1 cup quinoa, boiled
  • 4-5 fresh  parsley sprigs
  • 1 spring onion with greens, finely chopped
  • 1 medium tomato, finely chopped
  • 1 teaspoon dark soy sauce
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • Salt to taste

Method

  1. Chop parsley
  2. Mix quinoa, chopped parsley, tomato, spring onion, chicken and salt in a bowl.
  3. For dressing, mix soy sauce, olive oil, lemon juice and salt in second bowl.
  4. Add the dressing to the salad and mix well.
  5. Serve immediately.
