By Sanjeev Kapoor 07 Oct 2014 in Recipes Course New Update Main Ingredients Eggplant / Brinjal, Potato Cuisine Bihari Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Chokha 1 large Eggplant / Brinjal boiled 1 medium Potato boiled 2 tablespoons Oil 1 small Onion chopped 5 cloves Garlic chopped 1/2 inch Ginger chopped 1 Tomato finely chopped 2-3 Green chillies finely chopped to taste Salt 2 tablespoons Fresh coriander leaves chopped Method Peel the brinjal and the potato and mash them. Heat oil in a non-stick pan. Add onions, garlic and ginger and saute for a minute on low heat. Add tomatoes and green chillies and saute for a minute. Add salt an d mashed brinjal and potato and mix well. Add coriander leaves and mix well.
