Citrus Marinated Prawns

Boiled prawns marinated in orange and lemon juice, and served dressed with the remaining marinade mixed with garlic, parsley and olive oil. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1/2 cup orange juice
  • 4 tablespoons lemon juice
  • 8-10 prawns (medium), shelled and deveined with tails intact
  • Salt to taste
  • Black pepper powder to taste
  • 1 tablespoon minced garlic 
  • 2 tablespoons chopped fresh parsley 
  • 2 tablespoons olive oil
  • 3 tablespoons lemon liqueur (optional)

Method

  1. Heat sufficient water in a non-stick pan and bring it to a boil. Add prawns and boil for a minute. Strain and transfer them in a shallow bowl.
  2. Add orange juice, lemon juice, salt and pepper powder and mix well. Refrigerate to marinate for 20 minutes.
  3. Arrange the marinated prawns on a serving platter.
  4. To make dressing, take the leftover marinade in a bowl. Add garlic, parsley, olive oil, lemon liqueur and whisk well. Add salt and pepper powder and whisk till well blended.
  5. Pour dressing on the prawns and serve immediately.
