By Sanjeev Kapoor 14 Nov 2016 in Recipes Course New Update Main Ingredients Scraped coconut, Ghee Cuisine Indian Course Mithais Prep Time 21-25 minutes Cook time 21-25 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Coconut Barfi 2 cups Scraped coconut fresh 1 tablespoon Ghee 1-1½ cups Castor sugar (caster sugar) 1 cup Milk a pinch saffron strands 3-4 + for for garnishing Green cardamoms to sprinkle Pistachios Chopped Method Grease a baking tin with some ghee. Heat sugar in a non-stick pan. Add milk, mix and cook till sugar melts. Add saffron and mix well. Coarsely crush cardamoms in a mortar using a pestle, add to pan and mix. Add coconut, mix continuously and cook on low heat till thick. Switch off heat, add ghee and mix well. Put the coconut mixture into a greased baking tin and level it out. Sprinkle some cardamom powder and pistachios on top and cool. Cut and serve.
