Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Cakes Recipe

  • Corn Kernels canned 3-4 tablespoon

  • Sweet Potatoes boiled and peeled 2 medium

  • Salt to taste

  • Red curry paste 2 teaspoon

  • Scraped coconut fresh 3 tablespoon

  • Coriander leaves finely chopped 2 tablespoon

  • Rice flour 3 tablespoon

  • Oil for shallow frying

  • Fresh coriander sprigs to garnish

Method

Step 1

Grate sweet potatoes into a bowl, drain and add corn kernels with salt, red curry paste, scraped coconut, coriander leaves and rice flour and mix well. Divide this mixture into 8 equal portions, roll into balls and flatten them into cakes.

Step 2

Heat sufficient oil in a non-stick pan.

Step 3

Shallow-fry the cakes in hot oil, turning sides, till crisp and brown on both the sides. Drain on absorbent paper.

Step 4

Arrange the corn cakes on a serving plate, garnish with coriander sprig and serve hot.
