Ingredients list for Drums of Heaven in Chilli Plum Sauce

  • 10 Chicken lollipops
  • 1 teaspoon Soy sauce
  • 1 tablespoon Garlic paste
  • 3 teaspoons Refined flour (maida)
  • 1 tablespoon Red chilli paste
  • 1 Egg
  • to taste Salt
  • 1 tablespoon Sweet chilli sauce
  • 2 teaspoons Vinegar
  • to deep fry Oil
  • Plum sauce
  • 8-10 Plums , seeded and coarsely pureed
  • 2 tablespoons Oil
  • 1 medium Onion , finely chopped
  • 1 tablespoon Garlic , chopped
  • to taste Salt
  • 1 teaspoon Red chilli paste
  • 1 cup Sugar
  • 1 teaspoon Vinegar

Method

  1. Put soy sauce, garlic paste, refined flour, red chilli paste, egg and salt in a large bowl and mix well. Add 1 tsp water and mix well. Add sweet chilli sauce and vinegar and mix. Add chicken lollipops and mix well. Keep them in the refrigerator for about 1 hour to marinate.
  2. Heat sufficient oil in a deep pan.
  3. To make plum sauce, heat 2 tbsps oil in a non-stick pan, add onion and garlic, mix and saute till they soften. Add plum puree and mix. Add salt and red chilli paste and mix well and cook on medium heat.
  4. Slide the marinated lollipops into hot oil and deep-fry till cooked and crisp.
  5. Add sugar to the sauce and mix till all the sugar dissolves.
  6. Drain the lollipops on absorbent paper.
  7. Add vinegar to the sauce and mix well. Switch off the heat and transfer the sauce into a small bowl.
  8. Arrange the lollipops on a serving plate and serve hot with the plum sauce.
