You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Fried Rice Recipe - SK Khazana Recipe

  • Eggs 3

  • Short grain rice cooked 3 cups

  • Oil 4 tablespoons

  • Spring onion bulbs chopped 1/2 cup

  • Spring onion green 1/2 cup chopped+ to garnish

  • Salt to taste

  • Crushed black peppercorns to taste

  • Vinegar 1/2 teaspoon

  • Light soy sauce to serve

Method

Step 1

Break eggs into a bowl, add salt and beat well.

Step 2

Heat oil in a non-stick pan, pour whisked eggs and scramble lightly.

Step 3

Add spring onions, salt, crushed black pepper, cooked rice, vinegar and light soy sauce and toss gently for 2-3 minutes.

Step 4

Transfer into a serving bowl and serve hot garnished with the spring onion greens.
