Ingredients list for Fried Egg Manchego

  • 4 Eggs
  • 2 medium Onions
  • 4 Bacon rashers
  • 5-6 cloves Garlic
  • 8 teaspoons Olive oil
  • 1 large Red capsicum ,cut into small cubes
  • 2 large Tomatoes ,blanched and cut into small cubes
  • to taste Salt
  • 1 tsp + to sprinkle Crushed black peppercorns
  • a few sprigs Fresh parsley
  • a few Fresh basil leaves
  • a few Fresh mint leaves
  • A fresh mint leaves

Method

  1. Roughly chop the onions. Roughly chop bacon rashers.
  2. Heat a non-stick pan, add bacon and saute for 1 minute. Add onions, mix and saute. Crush garlic cloves and add, mix and saute.
  3. Heat 2 tsps olive oil in another non-stick pan. Break an egg into this pan and fry.
  4. Add red capsicum and tomatoes to the first pan, mix well and continue to saute.
  5. Remove the egg from the other pan and place it on a plate. Fry other eggs similarly.
  6. Add salt and crushed black peppercorns to the first pan. Roughly chop parsley, basil and mint leaves, add to the first pan and mix well.
  7. Transfer equal portions of this mixture into 4 serving plates. Place a fried egg on top of the vegetables in each plate, sprinkle little crushed peppercorns over the egg and serve hot.
