Garlic Curry

Ingredients 

  • 12-15 garlic cloves
  • 1 cup coconut Milk
  • 1/2 cup thick coconut milk
  • 3 medium onions, finely chopped
  • 2-3 green chillies, finely chopped
  • 1/4 teaspoon fenugreek seeds (methi dana)
  • A pinch of saffron (kesar)
  • 1 teaspoon red chilli powder
  • 1 tablespoon Madras curry powder
  • Salt to taste

Method

  1. Boil thin and thick coconut milk in a deep non-stick pan, add onions and green chillies and mix well. Add fenugreek seeds, saffron, red chilli powder, curry powder, salt and garlic and cook, stirring continuously, for 10-12 minutes.
  2. Pour the curry into a serving bowl and serve hot.
