Garlic Mustard Prawns

Finished with a hint of pepper and ketchup, they’re best served hot with French or garlic bread. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 20 prawns shelled and deveined
  • 2 tablespoons butter
  • 2 spring onions, finely chopped
  • 6-8 cloves garlic, finely chopped
  • 2 tablespoons mustard seeds, coarsely powdered
  • 3 tablespoons cream
  • 2 tablespoons tomato ketchup
  • Salt to taste
  • ¼ teaspoon crushed black peppercorns
  • 1 stalk spring onion greens, chopped

Method

  1. Heat the butter in a non stick pan, add the spring onions and garlic and sauté lightly. Add the mustard powder, stir and continue to sauté. Add the prawns and cream and stir.
  2. Add the tomato ketchup, salt, crushed peppercorns and stir to mix. Cook for about half a minute on high heat. Do not overcook the prawns.
  3. Add the spring onion greens and immediately take off the heat. Serve immediately with French or garlic bread.
