Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Gond ki Raab Recipe

  • Edible gum crystals (gond) broken into small pieces 4 tablespoons

  • Ghee 2 tablespoons

  • Castor sugar (caster sugar) ½ cup

  • Desiccated coconut ¼ cup

  • Almonds 2 tablespoons

  • Cashewnuts 2 tablespoons


Step 1

Heat ghee in a non-stick pan, add edible gum crystals and let them pop.

Step 2

Add 2-3 cups water and stir continuously till the mixture thickens.

Step 3

Add sugar and mix well till the sugar melts. Add desiccated coconut, keeping aside a little for garnish, and mix well. Simmer for a minute. Add almonds and half the cashewnuts and mix well.

Step 4

Transfer gond ki raab into a serving bowl, garnish with remaining cashewnuts and some desiccated coconut and serve hot.
