Ingredients list for Gosht Kofta Curry
- 600 grams Boneless Mutton 1 1/2 inch cubes
- 1 cup Yogurt
- to taste Salt
- 2 teaspoons Ginger paste
- 2 teaspoons Garlic paste
- 1 teaspoon Red chilli powder
- 1 teaspoon Green cardamom powder
- 4 tablespoons Oil
- 2 Green cardamoms
- 3 Cloves
- 1/2 inch stick Cinnamon
- 5 Black peppercorns
- 1 Bay leaf
- 4 medium Onions sliced
- 2 Green chillies chopped
- 1 tablespoon Coriander powder
- 1/2 cup Tomato puree
Method
- Mix lamb mince, lamb fat and half the green chillies. Pass through a mincer.
- Divide into twelve equal portions and shape them into dumplings (koftas). Refrigerate for half an hour. Heat oil in a thick bottomed pan. Add cloves, green cardamoms, black cardamoms, cinnamon and sauté for two to three minutes.
- Add onions and remaining green chillies, sauté until onions are golden brown. Stir continuously. Add ginger paste, garlic paste, coriander powder, turmeric powder and red chilli powder.
- Cook for thirty seconds. Add tomato puree and cook till fat leaves the masala. Add three cups of water, salt and garam masala powder.

- Bring it to a boil and then add koftas. Reduce heat and cook for about ten to fifteen minutes or till koftas are tender. Serve hot garnished with coriander leaves.
