Ingredients list for Greek Chicken Roll
- 400 grams Boneless chicken cut into 2 inch thick strips
- 3 tablespoons Yogurt Greek
- 4 Tortillas readymade
- 1 tablespo + for greasing Olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Red wine vinegar
- 1 medium Onion finely chopped
- 1 tablespoon Garlic chopped
- 1 teaspoon Dried thyme
- ½ teaspoon Oregano
- 1 tablespoon Fresh coriander leaves chopped
- to taste Salt
- to taste Crushed black peppercorns
- 1 small Romaine lettuce shredded
- 1 medium Tomato seeded and cut into strips
- ¼ cup black and green olives sliced
- 2-3 tablespoons Feta cheese
- as required Tzatziki
Method
- Put olive oil, lemon juice, Greek yogurt, red wine vinegar, onion, garlic, thyme, oregano, coriander leaves, salt, crushed peppercorns and chicken in a bowl and mix well. Set aside to marinate for 10-15 minutes.
- Heat an electric griller and grease with some olive oil. Place the marinated chicken strips and grill on both sides till evenly done. Transfer onto a plate.
- Take each tortilla, place some grilled chicken, Romaine lettuce, tomato strips, mixed olives, feta cheese and tzatziki in the center and wrap.
- Diagonally slice and serve immediately with tzatziki.
