Green Jewels In A Bowl

Fresh green vegetables tossed in lemon juice and olive oil dressing, served with roasted sesame seeds. This is Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1/4 medium broccoli, separated into small florets
  • 1 medium green capsicum, cut into thin strips
  • 1 large cucumber, halved and sliced diagonally
  • 8-10 French beans, sliced diagonally and blanched
  • 3/4 cup bean sprouts
  • 6 lettuce leaves, torn and chilled
  • 1 stalk spring onion greens,sliced
  • 1 tablespoon roasted sesame seeds
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 3 teaspoons powdered sugar
  • 7-8 black peppercorns, crushed
  • Salt to taste

Method

  1. Blanch the broccoli florets in boiling water. Refresh in cold water. Mix together the ingredients for the dressing and set aside.
  2. Place the broccoli, capsicum, cucumber, French beans, bean sprouts and lettuce in a large bowl. Pour the dressing over the salad and toss well to mix.
  3. Serve, sprinkled with the spring onion greens and roasted sesame seeds.
