Ingredients 

  • 250 grams ladyfingers, slit and cut into big pieces
  • 1 teaspoon tamarind pulp
  • 3 medium onions
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 6-7 curry leaves
  • Salt to taste
  • 1/4 teaspoon turmeric powder
  • 3 teaspoons coriander powder
  • 2 teaspoons red chilli powder
  • 2 tablespoons peanuts, roasted and crushed
  • A few thin strips of ginger for garnishing

Method

  1. Cut onions into big cubes.
  2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add onions and curry leaves and sauté for a minute. Add ladyfingers and mix well. Add salt and turmeric powder and mix well. Cover and cook on low heat for 5-7 minutes.
  3. Add coriander powder and red chilli powder. Cover and continue to cook.
  4. Add tamarind pulp and mix well. Add peanuts. Cover and continue to cook for 5 minutes.
  5. Transfer into a serving bowl and serve hot garnished with ginger strips.
