Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Indian Fish Curry - SK Khazana Recipe

  • Medium pomfrets cut into darnes 2

  • Onions finely chopped 2 tablespoons

  • Dried red chillies 4-5

  • Fresh coconut scraped 1/2 cup

  • Salt to taste

  • Turmeric powder 1/2 teaspoon

  • Coconut oil 1 tablespoon

  • Ginger chopped 1/2 teaspoon

  • Tamarind pulp 1 tablespoon

  • Fresh coriander sprig to garnish

Method

Step 1

Put 1 tbsp chopped onion, red chillies, coconut and a little water in a grinder jar and grind to a fine paste.

Step 2

Take fish darnes in a bowl, add salt and turmeric powder and mix well. Set aside to marinate for 10 minutes.

Step 3

Heat oil in a non-stick pan, add ginger and remaining onion, mix and sauté till golden brown.

Step 4

Add ground paste, mix well and saute for 1-2 minutes. Add 2 cups of water and mix well. Let the mixture come to a boil.

Step 5

Add tamarind pulp and cook for 1-2 minutes. Add the fish pieces and mix lightly. Cook for 5-6 minutes on medium heat.

Step 6

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
