Indian Flavoured Anna Potatoes A very unusual potato snack – marinated potato slices stacked in muffin moulds and double baked. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 23 Feb 2017 in Recipes Course New Update Main Ingredients Potatoes, Butter Cuisine Indian Course Snacks and Starters Prep Time 21-25 minutes Cook time 31-40 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Indian Flavoured Anna Potatoes 4 medium Potatoes thinly sliced ¼ cup Butter 1 tablespoon Garlic chopped 1 teaspoon Red chilli powder ½ teaspoon Garam masala powder 1 tablespoon Fresh coriander leaves chopped to taste Salt ½ teaspoon Chaat masala 1 for garnishing Fresh parsley sprig for garnishing Fresh rosemary sprigs for garnishing Fresh thyme sprigs Method Preheat oven to 180° C. Line the dents in a silicon muffin mould tray with parchment paper and place on a baking tray. Take butter in a microwave proof bowl and heat in microwave to melt for 10-15 seconds. Take potato slices in another bowl. Add melted butter, garlic, chilli powder, garam masala powder, coriander leaves, salt and chaat masala and mix well. Stack the marinated potato slices in the dents of the muffin tray. Pour some of the remaining marinade on top. Place the baking tray in the preheated oven and bake for 30 minutes. Remove the tray from oven, remove the baked potatoes, flip, discard the parchment paper and place on the baking tray. Place the tray back in the preheated oven and bake for 10 minutes.
