Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Instant Rava Dhokla Recipe

  • Semolina (rawa/suji) 1 1/2 cups

  • Green capsicum chopped 1/4 cup

  • Corn kernels 2 tablespoons

  • Ginger-green chilli paste 1 teaspoon

  • Butter 1/4 cup

  • Salt to taste

  • Fruit salt 1 1/2 teaspoons

  • Oil 1 tablespoon

  • Mustard seeds 1/4 teaspoon

  • Cumin seeds 1/4 teaspoon

  • Sesame seeds (til) 1/4 teaspoon

  • Asafoetida a pinch

Method

Step 1

In a bowl mix together, semolina, green capsicum, sweet corn, ginger chilli paste, butter, salt and 2 tablespoons water. Mix well.

Step 2

Heat sufficient water in a steamer and just before steaming the batter add fruit salt and two tablespoons water. Mix well.

Step 3

Pour a ladleful of the batter in a greased thali and steam for ten to fifteen minutes or till done.Heat the remaining oil in a non stick pan, add mustard seeds, cumin seeds, sesame seeds and asafetida.

Step 4

Allow the seeds to splutter and pour over the dhoklas.Cut the dhoklas in diagonal pieces and serve hot.
