Jain Vada Pav

These vadas are made with raw bananas and can be had by the Jains. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Jain Vada Pav

  • 4-5 Raw Banana boiled, peeled and mashed
  • 4 Pav
  • for deep-frying Oil 1/2 tablespoon +
  • 1 teaspoon Split skinless black gram (dhuli urad dal)
  • 1 teaspoon Mustard seeds
  • 2 Green chillies finely chopped
  • 6-7 Curry leaves
  • 1 teaspoon Dried ginger powder
  • 1/2 teaspoon Turmeric powder
  • to taste Salt
  • 1 tablespoon Chopped fresh coriander leaves
  • 1 cup Gram flour (besan)
  • 4 Whole green chillies
  • as required Tamarind chutney
  • as required Green chutney

Method

  1. Place raw bananas in a bowl.
  2. Heat half tablespoon oil in a small non-stick tempering pan, add black gram and sauté till light brown. Add mustard seeds, green chillies, curry leaves, dried ginger powder, one-fourth teaspoon turmeric powder and pour the tempering on the bananas.
  3. Add salt and coriander leaves and mix well.
  4. Heat sufficient oil in a kadai.
  5. Place gram flour in a bowl. Add remaining turmeric powder, salt and sufficient water and mix well to make a smooth thick batter.
  6. Divide the banana mixture into four equal portions and shape them into small balls. Flatten them a little to make vade.
  7. Take out one teaspoon hot oil from the kadai and add to the batter and mix well.
  8. Dip the vade in the batter and deep-fry in hot oil till golden. Drain on absorbent paper.
  9. In the same hot oil, deep-fry whole green chillies for a minute. Drain on absorbent paper.
  10. Slit a pav horizontally without cutting through. Spread some green chutney and tamarind chutney and place a vada in it. Use up the remaining vade and pav similarly.
  11. Arrange them on a serving plate and serve hot with fried green chillies.
