Ingredients 

  • 4 cups jumbo prawns deveined
  • 3 cups sugarcane vinegar
  • 8-10 green chillies slit and deseeded
  • 1 sprigs curry leaves
  • Salt to taste
  • 10-15 kashmiri red chillies
  • 3-4 cloves garlic
  • 3 tablespoons cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon fenugreek seeds (methi dana)
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon fennel seeds (saunf)
  • 2 cups oil
  • 11/2 cups jaggery (gur) grated

Method

  1. Take a saucepan. Add prawns, two cups of sugarcane vinegar, green chillies, curry leaves and salt and cook for five to seven minutes till prawns are tender.
  2. Grind together Kashmiri chillies, garlic, cumin seeds, mustard seeds, fenugreek seeds, turmeric powder and fennel seeds to a fine paste. Heat oil in a pan. Add ground masala and sauté for two minutes stirring.
  3. Stir in jaggery and mix till it dissolves completely into the masala. Add prawn mixture with the vinegar. Cook on low heat for ten minutes. Cool completely and pour into a sterilized air tight jar.
