Favourite seafood? Prawns, prawns and more of prawns. A wide variety of small crustaceans, tiny relatives of the lobster, are known as prawns. Prawns are normally translucent when raw but get their distinctive pink or red colour on being cooked. one word of caution – if buying unpeeled prawns, smell for freshness and look for bright, shiny shells that have some spring left in them.

Ingredients for Kolmi Nu Khattu Mitthu Achaar Recipe

  • Jumbo prawns deveined 4 cups

  • Sugarcane vinegar 3 cups

  • Green chillies slit and deseeded 8-10

  • Curry leaves 1 sprigs

  • Salt to taste

  • Kashmiri red chillies 10-15

  • Garlic 3-4 cloves

  • Cumin seeds 3 tablespoons

  • Mustard seeds 1 teaspoon

  • Fenugreek seeds (methi dana) 1 teaspoon

  • Turmeric powder 1 teaspoon

  • Fennel seeds (saunf) 1/2 teaspoon

  • Oil 2 cups

  • Jaggery (gur) grated 11/2 cups

Method

Step 1

Take a saucepan. Add prawns, two cups of sugarcane vinegar, green chillies, curry leaves and salt and cook for five to seven minutes till prawns are tender.

Step 2

Grind together Kashmiri chillies, garlic, cumin seeds, mustard seeds, fenugreek seeds, turmeric powder and fennel seeds to a fine paste. Heat oil in a pan. Add ground masala and sauté for two minutes stirring.

Step 3

Stir in jaggery and mix till it dissolves completely into the masala. Add prawn mixture with the vinegar. Cook on low heat for ten minutes. Cool completely and pour into a sterilized air tight jar.
