Lauki Kiwi Masala

This unusual combination of bottle gourd and kiwis turns out to be quite a delicious sabzi. Bottle gourd and kiwi are tempered and cooked with basic Indian spices. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 500 grams bottle gourd (lauki/doodhi), peeled and cut into small cubes
  • 2 kiwi, peeled and cut into cubes
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 4 green chillies
  • 1/4 teaspoon asafoetida
  • 1 tablespoon chopped ginger 
  • 1/4 teaspoon turmeric powder
  •  Salt to taste
  • 1 tablespoon chopped fresh coriander leaves 

Method

  1. Heat oil in a non-stick pan. Add cumin seeds and mustard seeds and let the seeds splutter.
  2. Slit green chillies into two.
  3. Add asafoetida, ginger and sauté well.
  4. Add green chillies and sauté further. Add bottle gourd and toss. Add turmeric powder, salt and toss again. Cover and cook for 8-10 minutes.
  5. Add kiwis and mix well. Toss and cook for a minute.
  6. Add chopped coriander and toss again.
  7. Serve hot.
