Ingredients list for Lemon Rice

  • 1 1/2 cups Rice boiled
  • 4 tablespoons Lemon Juice
  • 1 teaspoon Mustard seeds
  • 1 Dried red chilli broken
  • 2 tablespoons Split Bengal gram (chana dal) soaked
  • 2 Green chillies slit
  • 6-8 Cashewnuts broken
  • 8-10 Curry leaves
  • 1/4 teaspoon Turmeric powder
  • a pinch Asafoetida
  • to taste Salt
  • 8 tablespoons Oil

Method

  1. Heat the oil in a non stick pan. Add the mustard seeds and when they splutter, add the red chilli, split Bengal gram and green chillies and sauté for a minute. Add the cashewnuts and curry leaves and sauté for a minute.
  2. Add the turmeric powder and asafoetida and mix well. Add the boiled rice and mix well. Add salt and quarter cup of water. Stir well, cover and cook for two minutes on medium heat. Sprinkle lemon juice and mix well. Serve hot.
