Ingredients list for Mango And Shrimp Stir Fry
- 2 medium Ripe mangoes 1/2 inch cubes
- 1 1/2 cups Shrimps shelled and devined
- to taste Salt
- 1 tablespoon Lemon juice
- 1 1/2 tablespoons Soy sauce
- 1 tablespoon Cornflour/ corn starch
- 1 Whole dry red chilli crushed
- 2 tablespoon Sesame oil (til oil)
- 4-6 cloves Garlic crushed
- 1 1/2 inch piece Ginger grated
- 2 medium Onions diced
- 1 kilogram Red capsicum cut into thin strips
Method
- Add salt, lemon juice, half tablespoon of soy sauce, cornflour to the shrimps and mix. Add half of the crushed red chilli and mix. Heat sesame oil in a wok.
- Add crushed garlic, grated ginger and sauté on high heat. Add onion and red capsicum strips and continue to sauté.
- Add the remaining soy sauce and a little water. Stir and cook on high heat. Add marinated shrimps and toss.
- Add a little water and cook for two minutes. Adjust salt and turn off heat. Add mango cubes and mix. Garnish with the remaining crushed red chilli and serve immediately.
