History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Masalapara Recipe

  • Whole Wheat Flour 1/2 cup

  • Refined Flour 1/2 cup

  • Baking powder 1/2 teaspoon

  • Ghee 2 tablespoons

  • Salt to taste

  • Carom seeds (ajwain) 1/2 teaspoon

  • Chaat masala 2 teaspoons

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Garlic finely chopped 2 cloves

Method

Step 1

Mix the two flours and baking powder.

Step 2

Add ghee and rub in with fingertips to get a mixture resembling breadcrumbs.

Step 3

Add salt, carom seeds, chaat masala, red chilli powder, turmeric powder and garlic .

Step 4

Add sufficient cold water and knead into a stiff dough.

Step 5

Cover the dough and let it rest for some time

Step 6

Preheat oven to 200°C. Grease a baking tray with a little oil and sprinkle refined flour on it.

Step 7

Sprinkle some refined flour on a flat surface and roll out the dough into a half-centimeter thick disc.

Step 8

Cut the rolled out dough into diamond shaped pieces .

Step 9

Place them on the baking tray and bake in the preheated oven for fifteen to twenty minutes.

Step 10

Serve hot or cool completely and store in an airtight container.
