Ingredients
- 1 cup fresh green peas
 - 150 grams ready-made samosa dough, cut into strips
 - 1 teaspoon ghee
 - 1 teaspoon cumin seeds
 - 1-2 green chillies, chopped
 - 1 inch ginger, finely chopped
 - 1 small onion, finely chopped
 - Salt to taste
 - 1½ teaspoons garam masala powder
 - Oil for deep frying
 - Green chutney to serve
 - Sweet tamarind chutney to serve
 - Chopped coriander for garnish
 
Method
- Heat ghee in a non-stick pan; add cumin seeds, sauté till the colour changes. Add green chillies, ginger and sauté well.
 - Add onion, sauté well and cook till translucent. Add fresh green peas, 3-4 tablespoons water and mix well. Add salt, garam masala powder, and mix well. Cook for 5 minutes or till the green peas are cooked.
 - Mash the cooked mixture with a masher and cook for a minute. Take it off the heat and set aside to cool.
 - Seal the edges of a samosa strip using a little water and stuff it with a portion of the prepared mixture and seal the top with a little more water to shape it like a samosa. Make more and set aside.
 - Heat sufficient oil in a non-stick pan, deep fry the samosas till golden brown and crisp. Drain on an absorbent paper.
 - Garnish with chopped coriander and serve hot along with green chutney and sweet tamarind chutney.
