Ingredients list for Meetha Poha

  • 2 1/4 tablespoons Pressed Rice grated
  • 3 tablespoons Jaggery
  • 1 cup Pressed rice (poha)
  • 1 1/2 tablespoons Ghee
  • 8-10 Cashewnuts halved
  • 2 tablespoons Raisins
  • a few strands Saffron (kesar)
  • 1/2 teaspoon Green cardamom powder

Method

  1. Heat ghee in a non-stick pan. Add cashewnuts and raisins and sauté for 2 minutes. drain and set aside in a bowl.
    Soak saffron in ½ cup water in a bowl and heat in the microwave for 1 minute.
  2. Add poha to the ghee remaining in the pan and sauté for 2-3 minutes.
    Add saffron water and mix and cook till poha is half done.
  3. Add sugar and mix. Add green cardamom powder and mix again. Cook for 2-3 minutes.
  4. Add jaggery, mix gently and cook till fully done.
    Reserve a few fried dry fruits and add the remaining. Mix well and cook for 1 minute.
    Garnish with the reserved fried dry fruits and serve hot.
