Ingredients list for Meethe Sevaiyan

  • 1 1/2 cups Roasted vermicelli (sevaiyan)
  • 1/3 cup Sugar
  • 1 1/2 cups Milk
  • 2 tablespoons Ghee
  • 1/4 cup Cashewnuts halved
  • 1 tablespoon Almonds slivered
  • 1 tablespoon Pistachios slivered
  • 1/2 teaspoon Green cardamom powder
  • A pinch + to garnish Saffron strands

Method

  1. Heat ghee in a non-stick pan, add cashewnuts, almonds and pistachios and sauté on low heat for 3-4 minutes.
  2. Add vermicelli, mix and sauté for 5 minutes. Add milk, green cardamom powder and a pinch of saffron. Mix well, cover and cook on medium heat for 5 minutes.
  3. Add sugar and sprinkle some water, mix well, cover and cook for 3-4 minutes or till done.
  4. Transfer into a serving bowl, garnish with saffron and serve warm.
